~Salsa Rolls~
Pastry:
3 cups flour
2tbsp baking powder
1/2 tsp salt
1/3 cup hard margarine
2tbsp chopped parsley
1 cup milk
Filling:
1/2 cup ricotta
1/2 cup sharp cheddar
1/2 cup chunky salsa
1-2 tbsp chopped jalapeno pepper
2 cloves garlic minced
Combine flour, baking powder and salt. Cut in margarine. Add parsley, then milk until it's a soft dough. Knead 4-5 times. Roll on waxed paper (approx a 10"X15" piece)
Filling: Combine ricotta, cheddar, salsa, jalapeno and garlic till well mixed. Spread on dough. Roll dough and pinch at seam. Cut into slices and place on greased baking sheet 1 1/2" apart. Bake at 375 for 15-20 minutes, until golden.

Broccoli muffins
2 cups all-purpose flour
1/3 cup light-brown sugar, packed
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk
1/2 cup butter, melted and cooled
2 eggs, lightly beaten
1 teaspoon vanilla
2lb chopped broccoli
1/2 cup walnuts or 1/2 cup pecans, chopped

Preheat oven to 400°F.
Grease twelve muffin cups.
In a large bowl, stir together flour, sugars, baking powder, and salt.
In another bowl, stir together milk, eggs, butter, and vanilla until blended.
Make a well in center of dry ingredients.
Add milk mixture and stir just to combine.
Stir in broccoli and nuts.
Spoon batter into prepared muffin cups.
Now bake for 15-20 minutes or until a cake tester inserted in center of one muffin comes out clean.
Remove muffin tin to wire rack.
Cool for 5 minutes.
Remove from tins to finish cooling.
